I was wondering if organic chickpeas, cannelloni beans etc that are packaged in cartons in water are suitable for a low histamine diet or must they be bought dry and cooked as needed? Also with regards to pre-prepared supermarket salads that have no high histamine ingredients- are these suitable? I feel my diet is low histamine and while my digestive issues have reduced I'm still troubled with headaches on a daily basis- any suggestions?
I don't personally eat canned/packaged beans unless I absolutely have to. While I don't believe they'd cause a huge problem in the short term, I certainly wouldn't use them on a regular basis. I'd rather spend my histamine allowance on something more fun. I know it's a huge hassle soaking and cooking when you're trying to put together a quick work lunch...
Re packaged salads: I don't personally eat them because they're pumped full of nitrogen. Also studies on histamine levels in packaged sprouts aren't encouraging. If you're living in the states, packaged salads are soaked in chlorine baths (even the organic ones).

Thanks for the response- maybe that is where I'm going wrong and the cause of my on going headaches. I tend to have chickpeas, beans on salad for lunch most days as its quick and easy for work- may have to re-think! When are your meal planners available I need some inspiration I'm completely bored with food now!

You have such amazing information. I knew that salads in bag were not a good idea in general due to molds etc, but I had no idea that even organic lettuce was soaked in chlorine. How disgusting. Will certainly remember that now.
