I always use the whole egg. Some people might react to the proteins in uncooked egg whites - you're not allergic right?
I sometimes eat eggs every day when traveling - I've been known to scarf up to three a day!
Again, I don't recommend you following in my egg fetish footsteps, but they're a convenient eating out food for me too. You can get a decent omellette pretty much anywhere in the world...

Since you travel so much, is a book on traveling and histamine in the works? Eating out is difficult enough, now add airline food and exotic locations to the mix.

It is in the works! Unfortunately it would most likely involve a dehydrator and I'm not sure how many people would be willing to purchase one...
