I know that one of the things about histaminosis is that you shouldn't eat any leftovers as the histamine levels rise but I was wondering if it's possible there are exceptions to these rules. Is it possible e.g. to make oat bars or muffins and have some of them one day and the rest the next day?
To be honest it's quite difficult and expensive to make just two muffins and heat the whole oven just for that if you have nobody to share a bigger quantity with or if your family refuses to eat what you do (it doesn't matter how tasty it is!).
I would be very grateful about some help and generally any info about food storage (what is allowed and what's not)
I agree with you! It's too hard. What I'll do is freeze half of the batter, without the egg. I'll whisk the egg, use half for half of the batter that I'm using that day and then crack a fresh egg for the batter the next day.
I also do this with the yeast free flatbread and sometimes I'll freeze soup overnight. I'll sometimes eat leftovers that aren't flesh based, but only when I'm really pressed for time and I feel my overall levels are low.
Other than that I really don't risk it.

Ah, then I really wouldn't risk it. Send me a few pages of your food diary if you'd like a bit of analysis into your diet :)

I need to start actually doing the food diary because I do it for few days and then I forget. I know that it's extremely useful but like with everything else you need to be patient, motivated and focused.
