Hi, I tried to make the banana hazlenut muffins tonight but they didn't rise at all...when I re-read the recipe it said to mix in baking soda...but baking soda isn't mentioned in the ingredients list. Not being a chef, can you tell me if omitting the baking soda is why my muffins were flat and stodgy rather than light and fluffy? Also, how much baking soda should be added to this recipe? Thanks
Yup, I've made all the recipes, many times. I don't put anything out there that I personally haven't sampled.
The muffins aren't supposed to rise much at all (as you can see from the picture). They're very dense as they don't contain much fat, baking soda, or gluten. They were designed to be super healthy muffins for those on a histamine detox. If you send me an email to contact@thelowhistaminechef.com I can send you a muffin recipe that rises more like a traditional muffin. The baking soda mention was a typo sorry - I will remove it and send you an updated copy. I used search and replace and it seems it missed something.

Sorry, and to your other question: "flat and stodgy" isn't exactly how I'd describe it: maybe dense and nutritious ;)
It's the downside of using healthy ingredients high in the diamine oxidase support nutrients...
But I'm sorry it's been frustrating, I'll update the recipe description and send you a recipe that'll put a smile on your face.
Coincidentally, I was making muffins as I saw your message. Here's some pix of muffins with a lot more eggs, fat, agave and certainly not as nutritious or low histamine. They certainly rise more, due to the eggs, but this recipe still doesn't have any baking powder/soda which might cause problems.

Hi, just wondering if you've had time to look at this query. I've tried the recipe again using baking soda, and another time using self-raising flour but the recipe just doesn't work. Can you tell me where I'm going wrong? Have you actually tried making the muffins following your own instructions? I've wasted a lot of time and money on this recipe so far. Thanks
